CLAIRE'S FRESH CRANBERRY SALSA  AND       TURKEY QUESADILLAS
                                                             Cranberry Salsa

                         Cranberry Salsa
Ingredients:back to antojitos
1/2 pound cranberries (fresh or frozen - thawed) 
1/2 cup sugar    
1 tsp. grated orange zest   
1 Granny Smith apple, peeled & diced    
1 orange, seeded & diced.  
1/2 bunch cilantro - chopped. 
2 serrano chiles diced with seeds.  
1/2 bunch green onions, trimmed & chopped.    

Directions:
Finely chop the cranberries in a food processor or by hand. 
Combine in bowl with sugar, orange zest, apples, oranges, chiles, cilantro and green onions and mix together. 
Set aside for 1 hour and then chill.

                              Turkey Quesadillas

Ingredients:
4 10" flour tortillas
2 cups cooked turkey (if vegetarian use mushrooms)
1 cup of jack cheese
1 chopped jalapeño
vegetable cooking spray

Directions:
Cover one of the 10" flour tortillas with cheese, turkey and jalapeños
Cover with another tortilla (like a tortilla sandwich)
Spray frying pan with vegetable spray
Cook over medium heat for about 2 minutes on each side
Remove and cut into 6 pieces
Serve with cranberry salsa, guacomole and Mexican Crema (sour cream)
