Ingredients:
6 french rolls, cut lengthwise and then in half (depending on size of roll)
2 ounces of olive oil
2 cans of pinto beans (refried beans recipe below) or store bought refried beans
3-4 ounces queso fresco
Salsa. Store bought or make your own (see Tilapia Tacos)
Guacamole. Store bought or make your own (see Chunky Guacamole)
Refried beans ingredients:
vegetable oil or lard
3-6 cloves of garlic
onion chopped
1 jalapeño seeded and chopped
3 cups of cooked beans with some of the liquid from the cooked beans
salt
cumin
pepper
Directions:
you can buy refried beans or make your own. Here's an easy recipe:
Heat 4 tablespoons of vegetable oil or lard (use lard if you want the most authentic Mexican flavor), in a heavy frying pan or a wok, over medium heat
Add chopped onions and sauté until softened and beginning to brown
Add jalapeño and garlic, sauté for about 30 seconds
Immediately add a ladle full of cooked pinto beans, start mashing the beans in the oil
keep adding more beans and mashing, a large spoonful at a time
Complete the mashing of the previous spoonful before adding the next
Add salt pepper and cumin as you go, tasting till seasoning seems correct to you
Beans need alot of salt, keep adding and tasting as you go along.
Add a little bean liquid if you have it, Keep texture a little looser then you eventually want it, it will thicken as it cools.
Refried beans can be served on their own with a little sprinkle of cheese on top or with warm tacos, in burritos, as a side dish with fajitas.
Molettes:
Brush bread crumb side up with the olive oil (with a pastry brush if you have it)
Make a hollow spot by removing allittle bit of crumb from centre of rolls
Preheat your broiler
Broil rolls until crisp and golden (about 3 minutes, broilers vary in heat)
Remove from broiler but keep the broiler going
Heat refried beans
Fill the hollow spot in the rolls with the heated refried beans
top with queso fresco (crumbly cheese)
Broil a little more until cheese has melted
Serve with a little salsa and guacamole
