                      Heirloom Tomato Gazpacho

Ingredients:back to antojitos
6 heirloom tomatoes, seeded and chopped
1medium red onion, finely chopped
1 English cucumber diced
1 red bell pepper, seeded and diced
1yellow bell pepper, seeded and diced
1/4 cup chopped cilantro
1-2 jalapeno seeded and mince
2Tbsp red wine vinegar
1/4 cup extra virgin olive oil
1 cup tomato juice
1/2 cup aged balsamic vinegar
Hot Sauce to taste
Salt and pepper to taste
Sour cream for garnish

Directions:
In a large bowl combine chopped vegetables with cilantro, jalapeno, vinegar, tomato juice & extra virgin olive oil.
Add a couple of dashes of hot sauce & a few pinches of salt & pepper.
Refrigerate for at least an hour before serving.
When ready to serve, ladle into serving dishes & top with a dollop of sour cream. Yum Yum Yum

* I used 4 large heirloom tomatoes and it was a good amount

*You can make this dish your own by adding other ingredients for example you could add avocado or corn niblets
