Fresh Corn with Chipotle Lime Butter

Ingredients:back to antojitos
8 ears of fresh corn
1/2 lb. salted butter
2 limes Juice & zest them
1 green onion thinly sliced
3/4 tsp ground coriander
1 tsp ground chipotle chili
1 tsp salt (to taste)

Directions:
 Melt butter in small saucepan
 Add lime zest, juice, green onion, coriander, chipotle chili & salt.
 Stir to combine all ingredients.
 Melted butter mixture can be served on the side or brushed on corn before grilling (one  can also refrigerate it to be served later).
 Wrap each ear of corn with a little crushed ice in aluminum foil.
 Grill corn on the BBQ for about 20-30 minutes.
 
Serve butter mixture, lime wedges & salt to taste (if not added to corn before grilling).


* This was so yummy I had 4 pieces. I added more Chipotle chili!!
