                         Cilantro Chicken

Ingredients:Back to Platos
1/3 cup water
1 bunch fresh cilantro, sliced
1 (15.5 oz) can hominy, drained
1/2 head garlic
salt to taste
1 tbsp vegetable oil
1 red onion, coarsely sliced
1/4 tsp freshly ground black pepper
4 skinless, boneless chicken breast halves - sliced
1 cube chicken bouillon
1 cup uncooked long grain white rice

Directions:
Heat the oil in a large pot over medium-high heat, & saute the onion until tender.
Place the chicken in the pot, & cook this until lightly browned.
Puree the cilantro, garlic, & 1/3 cup water in a mixer or food processor/blender.
Mix into the pot with the chicken & onions.
Cook & stir about 5 mins, until mixed & heated through.
Pour enough water into the pot to cover all ingredients.
Mix the hominy, rice, & bouillon into the pot.
Bring to a boil, cover, & let simmer 20 mins, reduce heat, or until rice is tender.
Increase the amount of water as needed to attain desired consistency.
Spice up with salt & pepper.
