Annie's Red Salsa Strata

Ingredients:
1/2 loaf white bread, sliced & quarterted
1 lg. tomato, diced
8 eggs
2 cups of red salsa
2 1/2 cups whole milk 1/4 cup chopped jalapeno
8 oz. muenster cheese,
shredded peppers (fresh or canned)
8 oz. cotija cheese, crumbled
1 cup cooked black beans or canned
Directions:
Preheat oven 325". Whisk together eggs & milk in a bowl
Butter a 9 x 13" baking dish.
Cover the bottom w/ 1/2 of the bread then cover with 3/4 cheese
Layer remaining ingredients. Cover this w/the rest of the bread.
Top w/ remaining cheese.
Pour egg & milk mixture over the entire casserole.
Refrigerate 30 minutes then bake uncovered 40 minutes to 1 hour until puffy & golden on top
