Pescado Al Mojo De Ajo
INGREDIENTS:
4 PIECES OF RED SNAPPER FILLETS
1 LEMON (JUICE OF)
5 TBSP BUTTER
3 TBSP OLIVE OIL
4-5 CLOVES OF GARIC (VERY THINLY SLICED)
SALT AND PEPPER
1/4 CUP VEG OIL
1/4 CUP OF FLOUR
DIRECTIONS:
MARINATE 4 FISH FILETS IN LEMON JUICE WITH A LTTLE SALT AND PEPPER TO TASTE.
MEANWHILE HEAT BUTTER, OLIVE OIL AND GARLIC OVER A VERY LOW FLAME IN A THICK FRYING PAN UNTIL GARLIC GETS A LIGHT GOLDEN BROWN AND THEN REMOVE FROM HEAT (KEEP WARM).
REMOVE FISH FROM LEMON JUICE MARINADE AND DUST FLOUR LIGHTLY ON BOTH SIDES OF FILET.
HEAT SKILLET WITH SOME VEGETABLE OIL AND COOK FISH ON MEDIUM FLAME UNTIL FISH FLAKES EASILY( ABOUT 7 - 10 MIN. DEPENDING ON THICKNESS) TURN ONLY ONCE.
REMOVE FISH FROM SKILLET AND TOP WITH GARLIC BUTTER SAUCE.
