Drunken Plantains

IngredientsBack to Postres
3 ripe plantains (skin will be almost black)
1/4 cup of butter, diced
3TBSP of rum (dark or gold)
1 orange, grated zest and juice of
1 TSP ground cinnamon
1/4 cup dark brown sugar
1/4 cup sliced almonds

optional
fresh mint sprig, to decorate
Creme fraiche or heavy cream, even whip cream or Ice-cream

Directions
Preheat oven to 350º
Peel plantains and cut in half length wise
Put in shallow pan
Dot them all over with diced butter, then spoon on the rum and orange juice
Mix the orange zest, cinnamon and brown sugar in a bowl
Sprinkle the mixture on the plantains
Bake for 25 to 30 min until plantains are soft and the sugar, rum and orange juice have formed a sauce
Meanwhile in a heavy frying pan dry-fry almonds until the edges are golden.
Serve plantains in individual bowls with some of the sauce spooned over them
Sprinkle the almonds on top
Decorate with fresh mint sprigs and some fresh whipped cream on the side.

* You can use bananas also. It will be sweeter. The plantains have more substance and are not quite as sweet.
