Key Lime Pie
                     Key Lime Pie

Ingredients for graham cracker and pecan crust:

1 and 1/2 cup pecansBack to Postres
3/4 cup graham crackers
1 and 1/2 tablespoons of sugar
3/4 teaspoon cinnamon
zest from 2 limes

Directions
Lightly toast almonds in a frying pan with a little butter
Put toasted almonds in a blender
Add graham cracker crumbs , sugar, cinnamon and lime zest to blender
Bled until ingredients are thoroughly mixed together
Pour into pie pan. press down making sure the crust is even and up around the sides of pan

Ingredients for key lime filling:
7 egg yolks
1/2 cup of key lime juice
2 cans of sweetened condensed milk
zest from two key limes

Directions
using an electric mixer beat eggs on a high speed for 5 minutes
While mixer is running, very slowly pour in 2 cans of condensed milk, key lime juice and zest
Mix until smooth and creamy
Pour into pie crust
In the lowest rung of the oven we place a large pan of water
In the middle rung place the pie
Cook on a low heat, about 300º for 30 minutes
Refrigerate for about 4 hrs. before serving
