2-3 ripe avocados, peeled, pitted and diced
1/2 cup fresh lime juice (juice of 1 lime)
plus 2 tbsp. lime juice, divided
3-3 cloves garlic, chopped and divided
2 cups of half & half
Kosher salt
Freshly ground black pepper
2 tomatoes, seeded and finely chopped
1/2 small red onion, finely chopped
1/2 cup chopped fresh cilantro leaves
1 Jalapeño pepper, seeded and minced
Sour cream (optional)
Jalapeño sauce or other hot sauce (optional)

Directions:
In food processor, combine avocado, 1/2 cup lime juice and half garlic, then process until smooth.
Pour avocado puree into a large bowl and add half & half, plus salt and pepper, to taste.
Refrigerate for 1 hour until cold
While soup chills, make tomatoe salsa
In medium bowl, combine tomatoes, red onion, cilantro, jalapeño pepper, remaining 2 tbsp. lime juice and remaining garlic
Season with salt and pepper, to taste
Remove soup from the refrigerator and taste for seasoning,
If you feel the soup needs thinning add additional half and half or cold water
Place cold soup in chilled bowls, garnish with tomatoe salsa and serve with sour cream and jalapeño sauce (if desired)
